INSPIRATION We obtained a 2000L French oak Foedre from Melbourne whisky legends Starward back in 2021. The foedre is a traditional wooden vessel that offers us the opportunity to easily conduct full ferments in oak. Village Saison was the first beer to be created in this vessel – providing the opportunity to showcase the unique qualities of the foedre and its influence on the beer. MÉTHODE Village Saison is 100% fermented in our large French oak foedre – left to ferment slowly for months with minimal intervention, allowing our house yeast the opportunity for maximum expression. This beer serves as an example of how the geometry and material of a fermentation vessel influences the beer’s final expression. TASTE Pouring an ochre hue with a fluffy off-white head, Village Saison offers bold aromatics of tropical and stone fruits. With notable body and a creamy texture, evident apricot, mango and papaya characters fill the palate alongside biscuity malt character and a balanced acidity for a refreshing finish.
