The winemaking of an orange wine from white Sauvignon Blanc grown on the Niagara Peninsula. We picked up the sauvignon skins, and marinated them for 4 months in a season that had previously spent a year in oak barrels. This is the longest maceration on grape skins we’ve done to date. The result is a winey, delicate, elegant beer with a dissalting hint of acidity. – Brasserie Dunham
